Yuzu 柚

Yuzu is a small, yellow-green or yellow-orange citrus fruit that is valued for its fragrant zest and tart juice that is reminiscent of oranges or grapefruits but which is difficult to substitute in Japanese cuisine because of its distinctive aroma. Yuzukosho is a popular condiment made from yuzu zest with chillies and salt.
