Usukuchi shōyu 薄口醤油

Usukuchi shōyu is a light soy sauce that is often favoured in shojin cuisine because of its paler colour. However, caution is advised because although it is a lighter colour, having used amezake in its production, it is actually higher in salt than regular shōyu. Therefore, use less quantities than you would normally use regular shōyu.
