Gobō 牛蒡

Gobo, known as burdock root in English, is a long slender root vegetable with a coarse texture and an earthy flavour. It is used extensively in traditional Chinese medicine and is gaining favour in Western kitchens, due to its promotion by the macrobiotic movement, because of its high nutritional value.
